The team of Ember & Oak is dedicated to educate diners that there is a more sustainable path forward that includes eating more beef. The tongue 2 tail movement is to make all parts of the cow approachable, and part of our lifestyle and daily diet. If we can incorporate unique familiar flavors and techniques, we believe we can show everyone there is more to a cow than a filet mignon or ribeye. While consistently innovating favorite parts of the cow on menus, factory farms wont be as necessary, and the incredible ranchers across this country who have dedicated themselves to raising their heards the right way will thrive.

Ember & Oak’s Steak Butter epitomizes our Tongue 2 Tail philosophy. We respect the sacrifice of the animal, and the hard work it takes to raise it the right way. It is our ancestry, with being the best source for optimal nutrition, so every day in the kitchen, chef Kevin and Kyle make sure to find outlets for each component of the animal. By bringing these nutrients and knowledge back to our dining tables, it gives the opportunity for everyone to taste. Each animal is considered too precious to discard or throw out.
